Oven Roasted Carrots

Oven Roasted Carrots are delicious, healthy, and can be enjoyed with only a few minutes of efforts on your part. Markets are usually full with different varieties of carrots during the fall. Did you know there are over 40 varieties of carrots?

The carrots I used for this recipe are called Kaleidoscope carrots. These carrots are a mixture of beautiful fall colors- yellow, orange, and, purple. Kaleidoscope carrots are medium size. You don’t have to use this particular type of carrot but they do need to be a similar size for the cooking time to match. If you can only find the extra large size carrots that’s ok- you’ll need to cut them in half or in quarters, length wise.

Oven Roasted Carrots

Here’s an easy recipe for quick oven roasted carrots. Roasted carrots make a nice side to accompany almost any dinner.

INGREDIENTS

  • 12 Kaleidoscope carrots

  • avocado oil

  • iodized sea salt

  • black pepper

  • 4 fresh thyme sprigs

INSTRUCTIONS

Here’s how to make Oven Roasted Carrots at home.

  1. Preheat oven to 425° F

  2. Line baking sheet with parchment paper

  3. Peel carrots and place in a bowl spray or drizzle lightly avocado oil, season with salt and pepper

  4. Divide the thyme sprigs into half. Pull off the leaves from one half and sprinkle on carrots.

  5. Put carrots onto prepared baking sheet. Bake for 30 minutes
