This is a simple recipe to make Mac-N-Cheese powder that makes a creamy cheese sauce when combined with milk or non-dairy milk. This is a great cheese sauce substitute for my vegan or non-dairy friends.

Changing to a lectin-free lifestyle was a learning curve especially when it came to the kids food department. The simple truth is, healthy food, taste healthy. I’m embarrassed to say this, but my daughter would live off Kraft mac-n-cheese if I let her. Actually, there was a 2 year space in time when we went through an “orange food only” phase where I think mac-n-cheese and Goldfish was the only thing she would eat. Shamefully, it was a dark time but we made it through to this glorious place we are now.

Recipes like this one come in handy now-a-days. When I have a difficult time getting her to eat her veggies, I will whip up some of this mac-n-cheese sauce and spoon it over everything from broccoli, cauliflower, to cassava pasta.

Tips from LECTIN FREE WIFE

  • Milk it. You can use a non-dairy milk like almond or macadamia. I usually use A2 Whole Milk because I think it gives it a beautiful creamy flavor.

  • Double it. Double this recipe and store in a mason jar, so you’ll have some cheesy powder when I need it.

INGREDIENTS

Here’s all the goodies you need to make Mac-N-Cheese Powder.

  • 1/2 c nutritional yeast flakes

  • 5 tbsp arrowroot starch

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbs iodized sea salt

  • 1/4 -1/2 tsp turmeric powder (more turmeric will give a more cheesy color)

INSTRUCTIONS

Here’s how to make Mac-N-Cheese Powder.

  1. In a food processor combined the nutritional yeast, arrowroot starch, garlic powder, onion powder, salt, and turmeric powder and pulse until forms a fine powder

  2. Transfer to mason jar and use as needed

Here’s how to make Mac-N-Cheese Sauce.

  1. In a small sauce pan over medium-low heat, add 1 cup of milk (or nut milk) and 3 tbsp of cheese powder

  2. Combine with whisk. Continue whisking occasionally as sauce begins to thicken

  3. Cooking time will vary depending on heat. Sauce is ready to use when it becomes thick, smooth and creamy consistency
